How I use it:

My parents both grew up on farms in rural NC.  Throughout the week, they primarily ate fresh beans and vegetables straight from the garden.  Meat was reserved for Sunday dinner and special occasions.  For my dad that meant pork from pigs raised right in his own yard or venison from his father’s hunting trips.  For my mom that meant chicken from their own chicken coop or beef raised on a neighboring farm.

My dad went to school daily with liver sandwiches, ate hog’s head cheese regularly, and gizzards were a key ingredient in chicken ‘n dumplings.  Because bellies needed to be filled and people were poor, no edible part of an animal was wasted.  Apparently like most folks, my parents had no idea how incredibly nutritious these animal parts were.  So as my parents became more financially secure, these foods were completely removed from their diets and exclusively replaced with lean cuts of animal muscle.

All that to say, the knowledge of how to prepare and cook these animal parts was not passed down.  These foods are foreign to my palette.  When I think about eating a hearty bowl of liver…well, I can’t! So I use Ancestral Supplements as my go to for nose to tail eating!
